Namaste Foods Muffin Mix

I have a problem, I'm totally addicted to muffins. Before going gluten-free, I would eat Dunkin Donuts muffins practically every day. Mornings are tough for me, I sleep until the last possible minute, then I walk to the train, ride the train in to the city and then walk to my office. I don't leave myself time to make anything so I'm always looking for things I can just grab on the run. I know I've blogged about this before.

Sunday I went to the health food store because I know that they have frozen GF muffins. When I got there, I saw that they have added a whole new line of Namaste mixes, including this Gluten, Wheat, Soy, Nuts, Potato, Corn, Dairy and Casein Free Muffin Mix. The price for the mix was $4 or $5 and makes 12 muffins, the price for 6 frozen muffins was about $6. And it's easy, just add 2 eggs, oil and water, stir, pour, bake, done! You can add anything you want to the mix, blueberries, chocolate chips, etc. I opted for gf/dairy free chocolate chips. The muffins are not crumbly at all, they are holding up well in the fridge too. I just pull one out in the morning, heat it up in the microwave for 25 seconds, and eat it on my walk to the train. The taste is decent, it's made mostly with brown rice flours. It's not the healthiest breakfast, but it's convenient and gluten-free which at this point are my two major requirements. I'll work on the healthy part later!

I also bought some Food for Life tortillas, which I will have for lunch. Look for the review tomorrow!

I bought this mix too when I was craving chocolate chip muffins. I made them, took a bite of one, and then threw them away. Lol! I didn't really like this mix. I'm more partial to the Whole Foods 365 muffin mix.

Yeah, "decent" wasn't my first choice of descriptive words, but I don't think they're that bad. The chocolate chips cover the taste of the muffin itself, but I probably won't use this mix again. I'm terrible at giving bad food reviews. I'll have to try the 365 mix!

I'm glad they stuck together at least.

At the Good Health Store they also have these carrot muffins in the freezer section that I love. Unfortunately, they're a bit pricey and high in sugar. I must figure out how to replicate them!

I've made muffins by adapting regular muffin recipes to make them gluten free using either Arrowhead Mills GF all purpose flour or Pamela's pancake mix. It's always worked for me. Granted, I don't have a muffin pan, so I end up making breakfast "breads" out of them.

Also, let's get together again sometime (perhaps somewhere between us this time so you don't have to drive so far?)...no superbowl necessary.

Funny your post is about muffins. I tried to make muffins when I first was diagnosed and they turned out awful. I think I used a Krustez muffin mix. Again...awful! So this past weekend, I was looking for something to bake and found a muffin recipe on the bag of Pamela's pancake mix. I added fresh blueberries and they were delish! Even my daughter and husband loved them. We ate them all that day! The recipe only makes 6 muffins, so I will definitely try doubling it next time!

I made these tonight and added about a half cup cocoa, fourth cup brown sugar, and one cup of chocolate chips, oh yeah and about 2 table spoons of vanilla... I treated it like raw batter that needed the extra's and it turned out pretty good. It hit the spot.But I have heard that Pamela's is better.. I am trying this recipe listed added to hers and will let you know.
