Nesting Season
Fall and Winter are the days for comfort foods. Most of which are filling, fattening, gluteny dishes. Last night I found myself making a list of foods that I want to try to make GF versions of. Chicken pot pie is my all-time favorite comfort food. I used to buy Mrs. Budd's brand with the thick crust on top and serve it over rice or mashed potatoes. YUUUUUM. Then I'd sit on the couch feeling like I had just dined on a dish of wet cement.. but the taste was too delicious to pass up! Now that Mrs. Budd's is off my radar, I am in the market for a good GF alternative. I've been stocking up on recipes that I've borrowed from all you awesome GF cooks out there and I might even have one already in my files but if you have a good recipe please pass on the link! I also am going to buy some glutino pretzels and make chocolate covered pretzels one of these days. Maybe for Halloween, ooh yeah, that sounds good! I also am really in the mood for corn bread, maybe with some chili... oh my gosh, so much for losing a couple pounds!!!

I was thinking about attempting it with the crust I made for my recent apple pie and the filling from a barefoot contessa episode:

Oh! And for a pie crust, the book You Won't Believe It's Gluten Free, by Roben Ryberg, has a really good one.
